The joys of parchment paper

I know it’s pretty laughable that I only discovered parchment paper a few years ago, but there’s always someone late to the party. Parchment paper is your friend, and it’s so ridiculously versatile and handy, I can’t believe I baked without it for all these years! (Although, having been single until I was 53, I must admit to not having baked much in those years.) I even turned my husband Harvey onto it. Now he uses parchment paper for everything. I caught him the other day trying to make a fruit salad on parchment paper. We buy the stuff by the truckload now. It saves on clean up, eliminates the possibility of burned pans, and withstands high heat. Plus, it contains some sort of magic that results in perfect meals every time. Seriously, I haven’t had a fail since I became a parchment paper convert. I know. Crazy, right?

My latest foray into culinary exploration using parchment paper was Greek sheet pan chicken. Harvey tried the recipe first, and it scored a 10/10. Weeks later, he asked me if I wanted to make it and, quite frankly, I couldn’t say no. After all, he’s been making me pancakes for breakfast three times a week, so I was hardly in a position to negotiate. I was just worried that I wouldn’t be able to replicate it. But I sucked it up, donned my Disclosure Diner apron and got on with it. Without a word of a lie, this recipe produces the most juicy, harmonious flavours I’ve had in eons. And there was virtually no clean up – winner, winner chicken dinner.

The recipe is from the website Downshiftology, and it’s by Lisa Bryan. Thank you, Lisa. It’s a wee bit labour-intensive, with all the chopping, mincing, dicing and marinating, but what isn’t time-consuming these days? Caveat: the original recipe calls for feta cheese, but since I don’t mix meat and milk, I omit that. Believe me when I tell you that there’s plenty of salt in this recipe already. Feta compli! Just cook up a side of rice, orzo, quinoa or bowtie pasta and you’re set. Oh, and maybe whip up a salad if you’re feeling inspired.

Now, I know that lots of people prefer the leaner white chicken meat, but thighs are just more tender and moist. You can be the judge, but I can’t be responsible for the cooking time for chicken breasts, so you’re on your own there.

Give this recipe a go, and tell me if this isn’t Mediterranean cooking at its best. I generally have a rule to not use recipes that call for more than five or six ingredients, but I made an exception here, and it paid off in spades.

GREEK SHEET PAN CHICKEN

1/2 cup olive oil
juice of 1 1/2 lemons (about 3 tbsp)
4 garlic cloves, minced
2 tsp dried oregano
1 tsp dried thyme
1 tsp Dijon mustard
1 tsp kosher salt
1/2 tsp ground black pepper
6 chicken thighs, bone-in, skin-on
1 medium zucchini, halved lengthwise and sliced
1 yellow bell pepper, chopped into 1-inch pieces
1 red bell pepper, chopped into 1-inch pieces
1/2 large red onion, thinly sliced
1 pint cherry or grape tomatoes
1/2 cup kalamata olives, pitted (more, if you love olives)
1/4 cup feta cheese (optional)
2 tbsp finely chopped fresh parsley

  1. Preheat oven to 425°F. In a small bowl, whisk together the oil, lemon juice, garlic, oregano, thyme, Dijon mustard, salt and pepper.
  2. Put chicken thighs in a bowl (or plastic bag) and pour two-thirds of the marinade on top. Then toss the chicken around in the marinade to make sure it’s well coated. Marinate the chicken for 15 minutes or more.
  3. While the chicken is marinating, put a piece of parchment paper on a baking sheet. Spread the zucchini, bell peppers, red onion and tomatoes onto the sheet and drizzle the remaining marinade on top. Toss together to coat the vegetables.
  4. Add the chicken thighs to the baking sheet and nestle the veggies around them. Bake for 30 minutes.
  5. Remove the baking sheet from the oven, add the olives (and feta, if you’re using it) and then put it back in the oven for another 10 to 15 minutes, or until the vegetables are soft and the chicken is cooked through. You can always turn on the broiler for a minute or two at the end if you like the skin crispy.
  6. Sprinkle the chicken and vegetables with finely chopped fresh parsley before serving.

Not only does this dish look gorgeous, but it’s got deep, rich flavour and the recipe is pretty easy to follow. Of course, if you’re serving it to company, it’ll take a bit of manoeuvring to transfer it to a platter because there are so many moving parts. But it’s a pandemic, so who’s having company over for dinner anyway?

Sometimes, I think to myself: do I really want to bother with all this dicing and chopping and slicing? Operative word: sometimes. This is a treat-yourself-to-a-sumptuous-dinner-and-stop-being-so-lazy kind of meal. Like my dad used to say: you’re the most important guest in your own home. Go nuts. Cook for looks. And taste. Like so many different meals, this one is just as good if not better the next day, since the flavours seem to marry overnight.

As for a pre-dinner treat, why not aim for easy but yummy. If you want to bump up the fanciness quotient a notch, make some toast points (crusts cut off), smear on some mayonnaise or egg mix, and top with caviar. I buy the inexpensive black lumpfish caviar for special occasions and it’s delish. It’ll impress the heck out of your partner, your guests, even yourself. And, you know what? You deserve it! Why should caviar be reserved just for New Year’s Eve or engagement parties? Those poor misunderstood fish roe – they deserve to be showcased all year round. If I weren’t afraid of all the judging that might accompany it, I’d eat caviar every day.

Another caveat: don’t eat this meal before you go for a blood test, because your sodium will be off the charts.

A grape holiday revival

Most of us are familiar with the spies who were dispatched by Moses to “spy” out the land of Canaan – they cut down a branch with a cluster of grapes on a staff and carried it back. Grapes were part of the summer harvest in ancient Israel. In fact, there was a holiday called Feast of First Fruits and Wine because grapes were the first major crop to ripen. It was not mentioned in the Bible, but in the Dead Sea Scrolls. It was celebrated on the third day of Av (July 24 this year), with Israelites bringing grapes to the Temple. So, here are some grape recipes in case you want to celebrate this little-known holiday.

VINEYARD CHICKEN
(I found this in an Empire Kosher recipe brochure many years ago. It makes eight servings.)

2 4-to-4.5-pound roasting chickens
2 lemons, cut in half
1/4 cup Dijon mustard
4 tsp ground ginger
salt and pepper to taste
2 tsp dry basil
2 tsp your favourite herb
6 peeled, quartered onions
4 cups chicken broth
1 cup orange juice
4 cups seedless red and green grapes
1/4 cup chopped fresh basil or cilantro

  1. Preheat oven to 425°F.
  2. Rinse and pat dry chickens. Squeeze half lemon over each chicken. Place two lemon halves inside each chicken.
  3. Combine Dijon mustard, ginger, salt, pepper and herbs in a bowl to make a paste.
  4. Rub mixture over each chicken and place rest in each cavity. Put chickens into a large roasting pan. Scatter four onions in the pan. Roast 30 minutes.
  5. Meantime, combine giblets, neck, two onions, chicken broth and orange juice in a saucepan. Simmer 25 minutes.
  6. Reduce oven to 375°F. Strain broth and add 1.5 cups to roasting pan. Roast 15 minutes and baste. Repeat three more times. Remove chicken, let rest 15 minutes and cut into serving pieces.
  7. Remove lemons, return chicken pieces to roasting pan, spoon juices and onions over chicken. Scatter grapes over chicken and add remaining broth. Cover and bake 15 minutes.
  8. Serve on a large platter with grapes and juices and sauce. Garnish with fresh basil or cilantro.

MIDDLE EASTERN ORANGE BLOSSOM FRUIT BOWL
(six servings; pareve)

1 fresh pineapple, peeled, cored and cut into slices then quarters from each slice
2 large peeled, sectioned oranges
2 cups seedless red or green grapes
1/4 cup orange blossom flower water or orange-flavoured liqueur
1/4 cup slivered almonds
confectioners sugar
cinnamon
mint sprigs

  1. In a bowl, mix pineapple pieces, orange sections, grapes and orange flower water. Cover and refrigerate two hours.
  2. Put nuts into a small frying pan. Cook and stir until toasted. Remove to a small bowl.
  3. Arrange fruits on a large platter. Sprinkle with confectioners sugar, cinnamon and toasted nuts. Garnish with mint sprigs. Serve cold.

GRAPES IN BRANDY
(five to six servings; dairy)

3/4 cup honey
3/8 cup brandy
1 tbsp lemon juice
1 pound seedless red and green grapes, without stems
1 cup sour cream
lemon peel curls

On the day before serving, mix the honey, brandy and lemon juice. Place the grapes in a large bowl and pour the mixture over them. Cover and refrigerate overnight.

The next day, divide the fruit mixture into serving dishes, champagne glasses or any unusual glass. Spoon sour cream on top of each. Garnish with lemon peel curls.

Why not take olive me?

It’s Thursday afternoon and I’m wondering what the maid is going to make for dinner. Or how I’m going to spend that $70 million Lotto Max I just won. Or when I’ll fly to Mars. See my quandary? I guess you could say I’m in a rut: fish, chicken, steak. Not being a big pasta fan, I seem to fall back on my old regulars every week. If I let him, my husband Harvey would eat pizza and pasta every night.

I remember the ’60s, when my mom had an unwritten weekly dinner schedule. Sundays were prime rib roast with Yorkshire pudding, roast potatoes and salad. The salad was only ever iceberg lettuce (hadn’t farmers discovered romaine, butter lettuce or kale yet??), mixed with cucumbers, tomatoes and green onions. Bottled dressing. The rest of the week’s dinners consisted of chicken livers with onions, salmon, meatloaf or hamburgers, or chicken. Each main was accompanied by the same weekly side dishes. And I mean the same. There was little, if any, variation from week to week. There’s something to say for consistency. With the exception of salad, every other vegetable mom served was frozen and came pre-chopped in a plastic bag. It was the ’60s after all. Occasionally, we’d go to the White Spot on Granville and 67th for a treat, and eat in the car, with the long tray spread across the front seat, attached to the window edges. Exciting times!

It’s funny that the ’60s and ’70s were a time of instant everything – Carnation Instant Breakfast, Pop-Tarts, Shake ’n Bake, Swanson TV Dinners, Nestle’s instant chocolate milk. Even though lots of women were stay-at-home moms and had time on their hands. Not to diminish the hard work they did raising their kids and keeping the house spotless. But let’s face it, lots of women today work outside the home and still do the majority of the childrearing and house chores. There were those privileged few who also had live-in housekeepers (yes, my family was one of them), and still my mother used lots of instant, pre-made foods. She was a good cook, for sure, but had to have a recipe in front of her. I’m like her in that regard. But I digress.

When we got married 10-and-a-half years ago, Harvey and I used to eat out at restaurants three to four times a week. So cooking was easy. Now, not so much. Sure, retirement provides me with more time to explore recipes. But my heart’s just not in it. Actually, that’s not true. I’m usually so busy volunteering that I simply don’t have the time (or inclination) to sit in front of a computer looking for culinary inspiration. Harvey thinks of cooking like a chemistry experiment, so he enjoys it. But as we get older (and sleep way less), we’ve kind of lost the fire in our bellies for cooking.

My father, alav hashalom, used to describe me as a human garbage disposal, because I would pretty much eat anything. He used to say that I’d “eat out of a puddle.” I was the “Give-it-to-Mikey-he’ll-eat-it” daughter. Admittedly, as long as someone else cooks it, I’ll eat it. That was then.

I am still a very easy-to-please eater – as long as the food isn’t too spicy, doesn’t contain too much roughage and doesn’t have nuts, corn, celery or raw vegetables in it. Well-seasoned food is nice, but, at heart, I’m a purist. With a bad gut. Bland food doesn’t bother me; in fact, I’ve been known to enjoy hospital food. After my recent three-month stomach illness, during which I ate only bland food, and very little, I’ve been a bit apprehensive about trying anything different. But, lately, as I’ve been feeling better, I figure it’s time to branch out. Caution to the wind!

As I strolled the culinary landscape that is the internet, I came across a particular chicken recipe by Tori Avey, whose recipes I’ve enjoyed before. Best thing about this recipe is that it’s easy. TORI AVEY’S MEDITERRANEAN OLIVE CHICKEN
(tweaked by me slightly)

3/4 cup chopped green olives (I used queen Manzanilla)
1/3 cup extra virgin olive oil
2 tbsp fresh lime juice
1 tbsp crushed garlic
2 tsp honey
1/2 tsp lime zest
salt and pepper
4-5 lbs chicken pieces, bone in, skin on (I use 6 chicken thighs, as we’re dark meat fans, but white meat would be fine, too)

The recipe also called for red pepper flakes and dried oregano, which I omitted, plus wine to make a sauce afterwards, which I also omitted.

  1. In a mixing bowl, whisk together the chopped olives, olive oil, lime juice, garlic, honey and lime zest. Season the marinade with salt and pepper to taste.
  2. Sprinkle the chicken pieces lightly with salt and pepper. Place chicken pieces in a nine-by-13-inch baking dish. Brush the pieces evenly with olive marinade, using all of the marinade to coat.
  3. Cover the baking dish with plastic wrap and place in the refrigerator for at least two hours (or up to overnight).
  4. Preheat oven to 375˚F. Remove the plastic wrap and cover the baking dish with foil. Pierce a few vents with a sharp knife around the outer edges.
  5. Place the covered dish in the oven. Let the chicken bake for 60 minutes, then remove the foil and bake for an additional 15 to 30 minutes, basting periodically, until well cooked and tender. At the end of cooking, you can broil it for a minute or two to brown the skin (I didn’t bother with this step).

After two bites, my husband pronounced this the best chicken I had ever made. Bar none. And we eat a lot of chicken. Since I usually bake chicken uncovered and it turns out dry, this was a surprising treat – extremely moist, über-flavourful and just as yummy the next day. I’ll probably double the recipe next time around, since it’s worth having enough left for a second dinner. This is one of those guest-worthy dishes – impressive, yet easy to prepare and sure to please. And it makes a nice Shabbat meal, too. I also realized the versatility of the marinade when I tried it on pasta. I’d place bets that it goes well with steak, too. One marinade, three uses. Now that’s a masterful marinade!

Chicken for Pesach midweek

After the sedarim, by midweek, you may be looking for some creative ideas for Passover dinners. Here are three dishes I frequently serve.

A mina is a traditional Sephardi savory layered pie, which is a great way to use up leftover chicken. In Spain and Turkey, it is called mina; in Egypt, maiena or mayena; in Algeria, meguena; and, in Italy, scacchi. The pie is also popular among Jews from the island of Rhodes and Yugoslavia.

A tagine is a North African, slow-cooked savory stew, named after the earthenware clay cooking pot, whose base is flat and circular with low sides. The cover is cone or dome shaped, which traps the steam and returns the condensed liquid to the pot, thus requiring very little liquid when cooking. In a chicken tagine, vegetables or dried fruit, nuts and spices are added.

Finally, leek patties known as kyeftes de prasa in Ladino, kifte in Turkish, keftas or keftes in Greek, are popular among Mediterranean Jews for Passover. I like to add chicken to mine.

CHICKEN MINA
6-8 servings

2 cups cooked, shredded chicken
1/2 cup chopped scallions
1/2 cup chopped Italian parsley
1/4 cup chopped mint
1/4 cup chopped dill
5 eggs
6 matzot
chicken soup
olive oil
1/2 cup tomato sauce
1/4 tsp nutmeg

  1. Preheat oven to 350˚F. Grease a rectangular or oval baking dish.
  2. In a bowl, combine chicken, scallions, parsley, mint and dill. Add two eggs and blend.
  3. In another bowl, combine three eggs, tomato sauce and nutmeg.
  4. Place matzot in bottom of a deep dish. Pour enough chicken soup to soften, about three minutes.
  5. Place two matzot in greased baking dish. Brush with olive oil. Spread half the chicken filling on top. Add two more matzot, brush with oil and spread rest of chicken filling on top. Top with remaining two matzot.
  6. Pour tomato sauce on top. Bake for 45 minutes. Cut into squares to serve.

CHICKEN TAGINE
8 servings

1 cup matza meal
8 pieces of chicken
4 cups chopped onions
2 cups chicken soup
1 1/2 – 3 cups prunes, apricots or other dried fruit
2 tsp cinnamon
1 tsp ginger
1/4 cup lemon juice
2 tsp lemon peel
1 cup slivered almonds
oil

  1. Place matza meal in a shallow dish. Dip chicken pieces in the meal.
  2. Heat oil in a soup pot. Add chicken and brown. Add onions, chicken soup and dried fruit and simmer until chicken is cooked.
  3. Add cinnamon, ginger, lemon juice, lemon peel, and almonds. Simmer another 20 minutes.

CHICKEN-LEEK PATTIES
6-8 servings

3 leeks
1 cup chopped onions
2 cups chopped cooked chicken
2 eggs
1 cup mashed potatoes
1/2 cup matza meal, plus extra
salt and pepper to taste
1 beaten egg
oil

  1. Place cut-up leeks and onions in a saucepan with water, bring to a boil, reduce heat and simmer 30 minutes.
  2. Drain and chop. Add chicken, eggs, 1/2 cup matza meal, mashed potato, salt and pepper and blend.
  3. Place egg in one shallow bowl and additional matza meal in the second bowl. Take chicken mixture and make into patties. Dip into beaten egg then in matza meal for coating.
  4. Refrigerate for awhile at this point if serving later. Before serving, heat oil in a frying pan and fry until patties are brown on both sides. Drain on paper towels.
