Here are some quick and easy recipes for appetizers when you\u2019re hosting \u2013 or contributing to a potluck.<\/p>\n<p><b>CHEESE PUFFS<br \/>\n<\/b><i>(makes 40)<\/i><\/p>\n<p><b>1 cup water<br \/>\n<\/b><b>6 tbsp butter, cut into small pieces<br \/>\n<\/b><b>salt and pepper to taste<br \/>\n<\/b><b>1\/2 cup flour<br \/>\n<\/b><b>1 tbsp Dijon mustard<br \/>\n<\/b><b>4 large eggs<br \/>\n<\/b><b>1 cup coarsely grated kosher Swiss cheese<\/b><\/p>\n<p>1.<span class=\"Apple-converted-space\">\u00a0 <\/span>Preheat oven to 425\u00b0F. Prepare several large cookie sheets with vegetable spray and flour.<\/p>\n<p>2. In a saucepan, combine water, butter pieces, salt and pepper. Bring to a boil, add flour and stir vigorously about two minutes with a wooden spoon until mixture forms a ball and is firm. Remove from heat.<\/p>\n<p>3. Beat in mustard, eggs and cheese.<\/p>\n<p>4. Drop by heaping teaspoons onto cookie sheets one-and-a-half inches apart.<\/p>\n<p>5. Place one sheet in top third of oven and one in bottom third of oven. Bake for 15 minutes.<\/p>\n<p>6. Reverse position of sheets and bake five minutes more or until puffs are golden brown. Serve hot.<\/p>\n<p><b>ARTICHOKE CHEESE SQUARES<br \/>\n<\/b><i>(makes 8 servings)<\/i><\/p>\n<p><b>2 six-ounce jars marinated artichoke hearts<br \/>\n<\/b><b>1 small finely chopped onion<br \/>\n<\/b><b>4 eggs<br \/>\n<\/b><b>6 crushed crackers<br \/>\n<\/b><b>2 cups kosher shredded sharp cheddar cheese<\/b><\/p>\n<p>1. Preheat oven to 325\u00b0F and grease a large baking dish.<\/p>\n<p>2. Drain artichoke hearts, reserving two tablespoons of marinade. Place in a bowl.<\/p>\n<p>3. Place reserved marinade in a frying pan and saut\u00e9 onions.<\/p>\n<p>4. Remove from heat and add artichokes. Add eggs, crackers, cheese.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>5. Pour into baking dish and bake 35-40 minutes.<\/p>\n<p>6. Cut into one-inch squares. It makes 8-10 servings)<\/i><\/p>\n<p><b>4 tbsp unsalted butter<br \/>\n<\/b><b>1\/2 cup olive oil<br \/>\n<\/b><b>3 large minced garlic cloves<br \/>\n<\/b><b>1\/2 cup chopped flat leaf parsley<br \/>\n<\/b><b>1 large split and halved baguette<br \/>\n<\/b><b>1\/2 cup freshly grated Pecorino-Romano or a sheep\u2019s cheese<\/b><\/p>\n<p>1. Preheat oven to 350\u00b0F.<\/p>\n<p>2. In a frying pan, melt butter in olive oil. Add garlic and cook one minute.<\/p>\n<p>3. Remove from heat and add parsley.<\/p>\n<p>4. Place bread on baking sheet<span class=\"Apple-converted-space\">\u00a0<\/span>cut sides up. Spoon garlic butter on top, sprinkle with cheese and bake 10 minutes.<\/p>\n<p>5. Turn on broiler and broil one minute.<\/p>\n<p>6. Cut bread into half-inch \u201cfries\u201d so they look like bread sticks.<\/p>\n<p><b>MARINARA \u201cKETCHUP\u201d<\/b><\/p>\n<p><b>1\/4 cup olive oil<br \/>\n<\/b><b>3 peeled, halved garlic cloves<br \/>\n<\/b><b>1 tbsp tomato paste<br \/>\n<\/b><b>35 ounces canned, whole, peeled Italian tomatoes<br \/>\n<\/b><b>salt and pepper to taste<br \/>\n<\/b><b>pinch of sugar<br \/>\n<\/b><b>2 sprigs basil<\/b><\/p>\n<p>1. Heat olive oil in a saucepan. Add garlic and cook, stirring, five minutes.<\/p>\n<p>2. Add tomato paste and cook one minute.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>3. Add tomatoes, crushing them with the back of a spoon.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>4. Add salt and pepper.<\/p>\n<p>5. Stir in sugar and basil and bring to a boil. Simmer until sauce is reduced to three cups and thick. Discard basil and garlic.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p><b>Sybil Kaplan<\/b><i>, z\u201dl, was a Jerusalem-based journalist and author. She always provided more stories than we could use, so, in this issue, we run a few we had yet to publish, honouring her in our way.
