It was known as an Italian peasant\u2019s dish or poor man\u2019s soup. Originally, it contained onion, garlic, celery, tomatoes and carrots \u2013 pasta seems to have been a later addition.<\/p>\n<p><strong>MY MINESTRONE<br \/>\n<\/strong><em>(6-8 servings)<\/em><\/p>\n<p><strong>2 tbsp margarine<br \/>\n<\/strong><strong>3\/4 cup chopped onions<br \/>\n<\/strong><strong>2 minced garlic cloves<br \/>\n<\/strong><strong>1 chopped leek<br \/>\n<\/strong><strong>1\/4 cup chopped celery<br \/>\n<\/strong><strong>1\/2 cup chopped carrots<br \/>\n<\/strong><strong>2 chopped turnips<br \/>\n<\/strong><strong>1 1\/2 cups chopped zucchini<br \/>\n<\/strong><strong>1 1\/2 cups chopped cabbage<br \/>\n<\/strong><strong>1 cup chopped potatoes<br \/>\n<\/strong><strong>2 tbsp beef soup bouillon<br \/>\n<\/strong><strong>1 cup chickpeas<br \/>\n<\/strong><strong>1 cup chopped tomatoes<br \/>\n<\/strong><strong>8 cups water<br \/>\n<\/strong><strong>2 tbsp tomato paste<br \/>\n<\/strong><strong>salt and pepper to taste<br \/>\n<\/strong><strong>2 tbsp chopped parsley<br \/>\n<\/strong><strong>1\/2 tsp basil<br \/>\n<\/strong><strong>1\/2 tsp oregano<br \/>\n<\/strong><strong>1 chopped bay leaf<br \/>\n<\/strong><strong>1\/4 tsp marjoram<br \/>\n<\/strong><strong>1\/2 cup small pasta<br \/>\n<\/strong><strong>Parmesan cheese (optional)<\/strong><\/p>\n<ol>\n<li>In a large soup pot, heat margarine. Saut\u00e9 onions, garlic and leek.<\/li>\n<li>Add vegetables, water and spices but not pasta. Bring to a boil, reduce heat and simmer one hour.<\/li>\n<li>Add pasta and cook 15 minutes. Ladle into soup bowls and add the cheese.<\/li>\n<\/ol>\n<p><strong>ROOT VEGETABLE MINESTRONE<br \/>\n<\/strong><em>(Adapted from a <\/em>Food &amp; Wine<em> recipe, it makes 6 servings.)<\/em><\/p>\n<p><strong>1\/4 cup olive oil<\/strong><br \/>\n<strong>1 finely chopped onion<\/strong><br \/>\n<strong>1 minced garlic clove<\/strong><br \/>\n<strong>1 sprig rosemary<\/strong><br \/>\n<strong>2 sliced carrots<\/strong><br \/>\n<strong>2 sliced parsnips<\/strong><br \/>\n<strong>3 broccoli stems or chopped kohlrabi<\/strong><br \/>\n<strong>3 cups cubed peeled, cut butternut squash<\/strong><br \/>\n<strong>6 cups pareve chicken bouillon<\/strong><br \/>\n<strong>salt and pepper to taste<\/strong><br \/>\n<strong>1\/2 cup angel hair pasta broken into 1-inch pieces<\/strong><br \/>\n<strong>1\/2 cup grated cheese<\/strong><\/p>\n<ol>\n<li>In a soup pot, heat two tablespoons olive oil. Add onion, garlic and rosemary and cook until onion is soft.<\/li>\n<li>Add carrots, parsnips, broccoli or kohlrabi and squash and cook for one minute. Add bouillon, salt and pepper and cook about 15 minutes.<\/li>\n<li>In a frying pan, heat the remaining two tablespoons olive oil. Add pasta and cook, stirring frequently, about four minutes.<\/li>\n<li>Add pasta to soup. Cook until tender, five to six minutes. Discard rosemary.
