Not only are fruits healthy \u2013 blueberries, for example, are low in calories but high in fibre, Vitamin C, Vitamin K and have a high antioxidant capacity \u2013 and delicious on their own but they make for great desserts, salads and spreads. Here are some recipes for a few of my favourite fruits: blueberries, peaches and apricots.<\/p>\n<p><strong>REVERSED BLUEBERRY COBBLER<\/strong><br \/>\n<em>six to eight servings<\/em><\/p>\n<p><em>base:<\/em><br \/>\n<strong>2 cups blueberries<\/strong><br \/>\n<strong>1\/2 cup sugar<\/strong><br \/>\n<strong>1 tbsp flour<\/strong><br \/>\n<strong>2 tsp grated lemon peel<\/strong><br \/>\n<strong>1\/8 tsp nutmeg<\/strong><br \/>\n<strong>2 tbsp pareve unsalted margarine<\/strong><\/p>\n<p><em>cake:<\/em><br \/>\n<strong>1 1\/3 cups flour<\/strong><br \/>\n<strong>3\/4 tsp baking soda<\/strong><br \/>\n<strong>3\/4 tsp baking powder<\/strong><br \/>\n<strong>1\/4 tsp nutmeg<\/strong><br \/>\n<strong>6 tbsp unsalted pareve margarine<\/strong><br \/>\n<strong>1\/2 cup sugar<\/strong><br \/>\n<strong>2 eggs<\/strong><br \/>\n<strong>1\/2 tsp vanilla<\/strong><br \/>\n<strong>1 1\/2 tsp grated lemon peel<\/strong><br \/>\n<strong>2\/3 cup non-dairy creamer<\/strong><\/p>\n<p>1. Preheat oven to 350\u00b0F. Grease a baking dish.<br \/>\n2. Combine blueberries, sugar, flour, grated lemon peel, nutmeg and margarine for base. Bake 10 minutes.<br \/>\n3. In a bowl, combine flour, baking soda, baking powder and nutmeg for cake.<br \/>\n4. In another bowl, cream margarine with sugar and eggs. Add vanilla and lemon peel.<br \/>\n5. Mix in dry ingredients with non-dairy creamer. Drop batter atop blueberry mixture. Bake for 40 minutes. Serve warm with pareve whipped cream or ice cream.<\/p>\n<p><strong>BLUEBERRRY YOGURT CAKE 1<\/strong><\/p>\n<p><strong>1\/2 cup butter or margarine<\/strong><br \/>\n<strong>1 cup brown sugar<\/strong><br \/>\n<strong>1 egg<\/strong><br \/>\n<strong>1 tsp vanilla<\/strong><br \/>\n<strong>2 cups flour<\/strong><br \/>\n<strong>1 tsp baking soda<\/strong><br \/>\n<strong>1\/2 tsp baking powder<\/strong><br \/>\n<strong>1 cup blueberry yogurt<\/strong><\/p>\n<p>1. Preheat oven to 350\u00b0F. Grease a cake pan.<br \/>\n2. Cream butter or margarine and brown sugar.<br \/>\n3. Add egg and vanilla and blend.<br \/>\n4. Stir in flour, baking soda, baking powder, alternately with yogurt.<br \/>\n5. Pour into a cake pan. Bake for 50 minutes.<\/p>\n<p><strong>BLUEBERRY YOGURT CAKE 2<\/strong><\/p>\n<p><strong>1 cup brown sugar<\/strong><br \/>\n<strong>1\/2 cup butter or margarine<\/strong><br \/>\n<strong>3 eggs<\/strong><br \/>\n<strong>2 cups flour<\/strong><br \/>\n<strong>1 tsp baking powder<\/strong><br \/>\n<strong>1 tsp baking soda<\/strong><br \/>\n<strong>2 cups blueberry yogurt<\/strong><br \/>\n<strong>1 tsp vanilla<\/strong><br \/>\n<strong>1 tsp cardamom<\/strong><\/p>\n<p>1. Preheat oven to 325\u00b0F. Grease a cake pan.<br \/>\n2. Cream half cup sugar and butter or margarine. Add eggs.<br \/>\n3. Gradually add flour, baking powder and baking soda.<br \/>\n4. Stir in one cup blueberry yogurt. Add vanilla and cardamom. Pour half of batter into cake pan.<br \/>\n5. Spread remaining sugar and yogurt on the batter. Add rest of batter. Bake for 45-50 minutes.<\/p>\n<p><strong>SPICED PEACHES<\/strong><\/p>\n<p><strong>4 cups sliced peaches<\/strong><br \/>\n<strong>1\/4 cup brown sugar<\/strong><br \/>\n<strong>2 tsp lemon juice<\/strong><br \/>\n<strong>12 cinnamon sticks<\/strong><br \/>\n<strong>2 tsp brandy<\/strong><\/p>\n<p>1. Place peaches, sugar, lemon juice, cinnamon sticks and two cups water in a saucepan.<br \/>\n2. Bring to a boil. Reduce heat and simmer 20 minutes.<br \/>\n3. Cool and add brandy. Pour into a jar with a lid or a bowl.<\/p>\n<p><strong>WALDORF PEACH SALAD<\/strong><br \/>\n<em>four servings<\/em><\/p>\n<p><strong>1\/2 cup chopped celery<\/strong><br \/>\n<strong>1\/2 cup sliced grapes<\/strong><br \/>\n<strong>1\/2 cup chopped apples<\/strong><br \/>\n<strong>1\/4 cup chopped nuts<\/strong><br \/>\n<strong>4 sliced peaches<\/strong><br \/>\n<strong>4 pieces Romaine lettuce<\/strong><br \/>\n<strong>1 tbsp brown sugar<\/strong><\/p>\n<p><em>dressing:<\/em><br \/>\n<strong>1\/2 cup mayonnaise<\/strong><br \/>\n<strong>1 cup whipped cream<\/strong><br \/>\n<strong>1 tsp grated orange peel<\/strong><\/p>\n<p>1. In a bowl, combine celery, grapes, apples and nuts. Toss lightly.<br \/>\n2. Place a piece of lettuce on each salad plate with a sliced peach on top. Fill with a quarter of the salad.<br \/>\n3. Sprinkle with brown sugar. Refrigerate.<br \/>\n4. In a bowl or jar with a lid, combine mayonnaise, whipped cream and orange peel. Spoon over each peach salad serving.<\/p>\n<p><strong>PEACH UPSIDE DOWN CAKE<\/strong><\/p>\n<p><strong>1 cup brown sugar<\/strong><br \/>\n<strong>1 cup chopped nuts<\/strong><br \/>\n<strong>2 cups chopped peaches<\/strong><br \/>\n<strong>1 cup brown sugar<\/strong><br \/>\n<strong>1\/4 pound butter or margarine<\/strong><br \/>\n<strong>1 egg<\/strong><br \/>\n<strong>1 cup milk or non-dairy creamer or pareve almond milk<\/strong><br \/>\n<strong>1 tsp vanilla<\/strong><br \/>\n<strong>2 cups flour<\/strong><br \/>\n<strong>1 tsp baking powder<\/strong><br \/>\n<strong>1\/2 tsp cinnamon<\/strong><br \/>\n<strong>1\/2 tsp nutmeg<\/strong><\/p>\n<p>1. Preheat oven to 350\u00b0F. Grease a cake pan.<br \/>\n2. Toss together one cup brown sugar, nuts and peaches. Sprinkle on the bottom of a cake pan.<br \/>\n3. In a bowl, cream one cup brown sugar and butter or margarine. Add egg, milk and vanilla and stir.<br \/>\n4. Add flour, baking powder, cinnamon and nutmeg and blend. Spoon into cake pan. Bake for one hour or until a cake tester comes out clean. Allow to cool before turning out onto a cake plate.<\/p>\n<p><strong>APRICOT JAM<\/strong><br \/>\n<em>This is a Grace Parisi recipe taken from <\/em>Food &amp; Wine Magazine<em>\u2019s online recipe pages. It makes three half-pint jars.<\/em><\/p>\n<p><strong><a href=\"http:\/\/www.jewishindependent.ca\/wp-content\/uploads\/2018\/07\/jul-13-FD.13.recipes-apricots-pixabay.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-29645\" src=\"http:\/\/www.jewishindependent.ca\/wp-content\/uploads\/2018\/07\/jul-13-FD.13.recipes-apricots-pixabay.jpg\" alt=\"photo - apricots\" width=\"400\" height=\"267\" srcset=\"https:\/\/www.jewishindependent.ca\/wp-content\/uploads\/2018\/07\/jul-13-FD.13.recipes-apricots-pixabay.jpg 400w, https:\/\/www.jewishindependent.ca\/wp-content\/uploads\/2018\/07\/jul-13-FD.13.recipes-apricots-pixabay-300x200.jpg 300w, https:\/\/www.jewishindependent.ca\/wp-content\/uploads\/2018\/07\/jul-13-FD.13.recipes-apricots-pixabay-150x100.jpg 150w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a>2 pounds pitted apricots, cut into 1\/2-inch pieces<\/strong><br \/>\n<strong>1 1\/2 cups sugar<\/strong><br \/>\n<strong>2 tbsp fresh lemon juice<\/strong><\/p>\n<p>1. In a nonreactive saucepan, toss the apricots with sugar and let stand, stirring until the sugar is mostly dissolved, about one hour.<br \/>\n2. Add lemon juice and bring to a boil until sugar is dissolved. Simmer until the fruit is glassy and the liquid runs off the side of a spoon in thick, heavy drops, 20-25 minutes. Skim off scum that rises to the surface.<br \/>\n3. Spoon into three half-pint jars, leaving a quarter of an inch at top. Close and let jam cool to room temperature. Store in refrigerator for up to three months.<\/p>\n<p><strong>SPICED APRICOTS<\/strong><\/p>\n<p><strong>2 cups apricots cut into halves<\/strong><br \/>\n<strong>2 tbsp brown sugar<\/strong><br \/>\n<strong>1 tsp lemon juice<\/strong><br \/>\n<strong>6 pieces stick cinnamon<\/strong><br \/>\n<strong>1 tsp brandy<\/strong><\/p>\n<p>1. Place apricots, sugar, lemon juice and cinnamon in a saucepan with a little water. Simmer until soft.<br \/>\n2. Add brandy and heat. Cool and spoon into a jar.<\/p>\n<p><strong>APRICOT BUTTER<\/strong><\/p>\n<p><strong>five cups<\/strong><br \/>\n<strong>2 pounds halved apricots<\/strong><br \/>\n<strong>1\/4 cup sugar<\/strong><br \/>\n<strong>1 tsp cinnamon<\/strong><br \/>\n<strong>1\/2 tsp cloves<\/strong><br \/>\n<strong>1\/4 tsp allspice<\/strong><br \/>\n<strong>2 tsp lemon peel<\/strong><br \/>\n<strong>1 tbsp lemon juice<\/strong><\/p>\n<p>1. Place apricots in a saucepan. Cook over low heat in their own juices until soft.<br \/>\n2. Puree in a blender and measure. Return to sauce pan, adding a quarter cup sugar for each cup of pulp.<br \/>\n3. Add cinnamon, cloves, allspice, lemon peel and lemon juice. Bring to a boil. Spoon into jars, close and refrigerate.<\/p>\n<p><strong>APRICOT LEATHER<\/strong><\/p>\n<p><strong>2 cups pitted apricots, cut into pieces<\/strong><br \/>\n<strong>1 tsp lemon juice<\/strong><br \/>\n<strong>1\/2 cup sugar<\/strong><\/p>\n<p>1. Preheat oven to 175-200\u00b0F.<br \/>\n2. Drop apricot pieces into a blender and puree. Add lemon juice and sugar.<br \/>\n3. Spray a cookie sheet with vegetable spray. Spread pureed apricots evenly, quarter-inch thick on a cookie sheet. Place sheet in oven and keep door open. Bake until dry, three to six hours. Let cool.<br \/>\n4. Cut crosswise once, lengthwise three times, so you have six pieces.<br \/>\n5.
