Fruity summer drinks

EILEEN GOLTZ ORTHODOX UNION

Summer brings an abundance of local fruit and berries. These fresh and fruity summer drinks deserve to be appreciated in the great outdoors.

WATERMELON LEMONADE
6 cups seedless watermelon chunks
1 cup water
1/3 cup sugar
1/2 cup lemon juice

Place the watermelon chunks and water in a blender and blend until smooth. Strain the liquid into a pitcher, along with sugar and lemon juice. Stir until sugar is dissolved. Refrigerate until chilled.

SANGRIA PUNCH
3 fresh peaches, peeled and seeded
1 cup strawberries (or other fruit(s) of your choice)
1 cup simple syrup (dissolve one part sugar in one part  boiling water, let cool)
2 cups orange juice
1/2 cup lime juice
1/2 cup brandy (I like peach brandy)
1/2 cup orange liqueur
3 (750-millilitre) bottles of red wine, preferably burgundy (about 10 cups)
1 orange, thinly sliced
2 limes, thinly sliced
4 cups club soda or 1 bottle champagne
ice

Purée the strawberries (or other fruits) in a blender or food processor. Combine the puréed fruit and simple syrup. Stir in the orange juice, brandy, orange liqueur and wine. Add the sliced fruit. Stir and chill in the refrigerator. Just before serving, stir in the club soda or champagne. Serve over ice in wine glasses.
